Serves: 4 – 6

Cooking Time: 10 – 15 minutes
Ingredients:
• 400 g readymade puff pastry, thawed
• 1 egg, whisked, or 20 ml milk
• 50 g almonds
• 2 mangos
• 200 ml mascarpone cheese
• About 50 ml honey
• Mint to garnish
Method:
- Preheat the oven to 220°C. Line a baking sheet with baking paper and grease with nonstick spray.
- Unroll the puff pastry on a floured surface. Cut the pastry into 4 – 6 uniform squares and arrange them on the baking sheet. Make a 1-cm incision around the edge of each square – don’t cut all the way through.
- Brush the pastry with the whisked egg or milk and bake for 10 – 15 minutes or until golden and puffed.
- Transfer the pastry to a cooling rack and leave to cool completely.
- Toast the almonds in the oven until golden. Set aside.
- Peel the mangos and dice the flesh.
- Put the pastry squares on 4 – 6 side plates and top each with a large spoonful of mascarpone cheese, toasted almonds, diced mango and honey.
- Garnish with mint before serving.
